Regarding Islam:

That verse refers to a singular Gospel, that which was given to Jesus, peace be upon him, and which he taught.

Wikipedia will confirm this.

This Gospel can not be corrupted, the Bible however is more than just that specific Gospel, and therefore most of it doesn't fall under Gods divine protection, since none of the new testament gospels were written by prophets. Plus we also dont believe in the Injil as a book that Jesus wrote and spread around, rather it is the message that was given to him that he taught his people.

To the point about the argument frequently made that the behaviour is too lowly to be from God:

Why SHOULD God become a man? Why does he need to become a man and die to forgive our sins by believing in the man as God and his sacrifice rather than just believing in God? Why does He need to portray his mercy through the death of an innocent man?
