If you're claiming there's "no evidence for macro-evolution" because nobody has watched the whole process of a species transforming into another, you'd also have to assert that there's "no evidence for fossilization" because nobody has sat and watched the whole hundreds or thousands of years process for a fossil to form.

If you're talking about the mechanical process of how animal remains can fossilize, we know that fossils don't have to form for hundreds or thousands of years, in fact, you can make one at home this week if you want to -> https://www.repentlabs.com/p/fossils
I think the real thing that's up for grabs is "what process or event laid these fossils down in the first place?", which is a historical science question. This would be the realm where, unless we have eyewitness accounts (God himself), we can only make fallible guesses, which is a much different standard than true observable science.
